Join Burnt Toast Farms and our special guests and contributors for an evening a savory goodness and seasonal edibles, Saturday, Aug. 19th with Chef Matt Walton of The Guild House. An outstanding evening dining out in the field with delightfully scrumptious farm fresh and local ingredients, bringing community together and real food to the table.
ABOUT THE CHEF
Matt unknowingly got his start in the restaurant industry at a young age "working" in his grandmothers home kitchen. He helped her make fresh pasta and sauces as well as Italian cookies. Matt progressed from there to sweeping floors and washing dishes in restaurants that his father cooked in picking up cooking experience along the way. Despite cooking in restaurants through high school and while attending Ohio State for international business, Matt did not pursue cooking as a profession until deciding to drop out of college for his love of food. Upon achieving a culinary arts degree, Matt has made his rounds of Columbus' best restaurants. Matt has called Cameron Mitchell Restaurants home for several years now and currently plys his trade as sous chef at the Guild House in the Short North. Matt resides in Clintonville with his soon-to-be wife, Jen, and their five dogs. They enjoy kayaking and entertaining friends when they aren't working in their respective restaurants.
Amuse Bouche: Lavender smoked tomato, burnt apple puree, crostini, local cheese, micros
App: Chicken lollipop, charred onion blackberry purée, pickled rhubarb, crispy kale
Salad: Shaved melon, sorrel, pickled watermelon rind, sunflower sprouts, cured duck egg, mustardo
Entree: Cucumber marinated heirloom chicken, kabocha squash BBQ, sweet corn and kale smashed potatoes.
Wine: Charm (Chardonnay ), a supple and slightly buttery, with aromas of peach and mango with layers of toast and spice that lingers on the palate in a vanilla-laden oak finish. Summertime (Riesling w/Green Apple), the flavor sensation of biting into a crisp, crunchy green apple, with a pleasant tartness followed by a delicious juicy finish. Clean, cool and crisp - a wonderful balance of apple flavor and with the firm character of the Riesling grape.
