Are you ready to learn the secrets to baking perfectly flaky, buttery Croissants? Learn from one of Columbus' foremost French pastry authorities, Chef Aaron Clouse. The class will cover the process of making traditional Croissants as well as demonstrate how to venture into flavored-croissant territory (think almond, ham and cheese, and chocolate).
This class will include the use of commercial kitchen equipment (proof box, blast chiller, and dough sheeter) in order to prepare Croissants within the class period. Chef Clouse will also provide instruction on how to replicate the process at home.
Students will leave with:
~ handmade dough
~ fresh croissants
~ a new familiarity with laminated doughs.
This class is appropriate for all baking levels although intermediate to experienced bakers may find it easier to replicate these pastries outside of the class. Students are advised to wear comfortable clothing and closed-toe shoes.
The class includes lunch and afternoon snack. Most dietary needs can be accommodated.
Pastry Chef Aaron Clouse discovered his love of pastry at a young age. Growing up on a small farm, he often helped his mother create wedding cakes at home. After high school, Aaron enrolled in The French Pastry School in Chicago and upon graduation became lead pastry chef at The Refectory, a premier fine dining Columbus restaurant. Aaron was also lead pastry chef at LBrands, managing large-scale production, banquets, and catering. He continues to hone his craft through international travels and training, art inspirations, and unexpected flavor pairings. He is currently head pastry chef for Gallerie Bar and Bistro and Hilton Columbus Downtown banquets and events. Chef Clouse has participated and appeared in many events and publications across Columbus including features in Columbus Monthly Magazine, Cincinnati Food and Wine Classic, and The James Beard Celebrity Chef Tour. He recently competed in Guy's Grocery Games on the Food Network. The episode airs February 7, 2018.
